The oil is obtained by pressing our olives and it has the typical “ garganico” flavor, green-yellow in colour and with fruity aroma. Its fruity flavor has an almond aftertaste. The extraction system is cold and takes place at a constant temperature of 27°C. The product is not subject to any mechanical filtration but to the exclusive natural decantation.
Our preserves are packed in extra-virgin olive oil produced by us. The Raw materials are selected on the field and immediately worked without additives and preservatives after the harvesting. The ancient tradition of the Gargano manor farm originates our Rosoli. The processing is done through the “maceration” and “percolation”. The first is to leave for a certain period of time a material in contact with a liquid that at room temperature melts itself till to draw the soluble principles. The second is a simple procedure that allows us to produce spirits, the times are longer and the results are excellent.

The cheese is made with milk of Podalica cow a protected bovine species of the National Park of Gargano that grazes freely and produces a special milk quality. The particularity of the herbs that are naturally present in the pastures of Gargano gives to the product a unique and special taste and perfume.
